Aloo Mirch Masala Sabji-Ranveer Brar

Here is our second recipe following our dear chef Ranveer Brar.



WHAT TO USE:

  1. 1 ½ tbsp Oil, 
  2. ½ tsp Cumin seeds, 
  3. ¼ tsp Fenugreek seeds, 
  4. A pinch of Onion seeds, 
  5. Ginger Garlic Paste (In a mortar pestle, add 1 inch ginger, 3 Garlic cloves garlic cloves, green chili and grind into a coarse paste)
  6. 6-7 Achaar waali mirch slit into half, 
  7. Salt to taste, 
  8. 3 Roma tomatoes, dice, 
  9. 2 tbsp Water, 
  10. Yogurt Mixture(add 1/3 cup yogurt, ¼ tsp turmeric powder, ½ tsp Kashmiri red chili powder, ½ tbsp coriander powder, a pinch of asafoetida and mix well. 
  11. 3-4 large Potatoes (boiled, peeled & cut into ¼) 
  12. 1 tbsp Cilantro leaves, chopped
  13. ½ tsp Ghee

For Garnish: Cilantro sprig

HOW TO MAKE

  1. In a heavy bottom pan or kadhai, add oil, once it's hot, add cumin seeds, fenugreek seeds, and onion seeds and let it splutter.
  2. Add ginger garlic paste and saute for a minute.
  3. Add Achaar waali chillies, salt to taste, and sear it well for 2-3 minutes.
  4. Add tomato and saute. Add some water and let it cook well.
  5. Add the prepared Yoghurt mixture and saute it well. Add potatoes and mix.
  6. Sprinkle some water, cover it with a lid and cook it for 6-7 minutes.
  7. Finish it with cilantro leaves and ghee.
  8. Transfer it to a serving dish and garnish it with a cilantro sprig.
  9. Serve hot with roti or paratha
