What to use:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/4 cup vegetable oil or Avocado oil
- 2 large egg
- 1/2 tsp vanilla extract
- 1 1/2 cups blueberries fresh or dried blueberries (I used dried)
- 1 Tbsp sugar
How to Make:
- Preheat Oven to 400 degrees Fahrenheit.
- Pour Dried blueberries into a small bowl and cover with water. Let stand for 10 min stirring occasionally to hydrate.
- Place butter in a microwave-safe bowl.
- Heat in microwave for 20 sec and make sure the bowl is deep else it splatters and make a mess in the microwave oven.
- Grease a bread pan with oil.
- In a large bowl, mix flour, sugar, baking powder, and salt in a large bowl. Stir milk, oil, egg, and vanilla extract into flour mixture until batter is just blended.
- Gently fold soaked, hydrated, and drained blueberries into the batter. Pour batter into prepared loaf pan. Sprinkle one tablespoon of sugar over the batter.
- Bake for 25-30 minutes or until the top is golden brown.
- Cool on wire rack.
