Healthier and Tastier than it sounds.
Borrowed but modified from onewholesomemeal
What to use:
2.5 cups Carrot greens washed and chopped fine
1 Cup Carrots, cubed
1 tsp Cumin seeds
1/2 tsp Hing(Asafoetida)
5-6 Curry leaves
1tsp Haldi(Turmeric Powder)
1/2 tsp Red Chili powder
1 tsp coriander powder
1/2 tsp Garam Masala
2 green chilies, slit vertically-deseed them
Salt to taste
1tbsp Mustard Oil or Avocado Oil
How to make:
Wash and drain the greens well, chop fine and keep aside
Chop carrots into cubes and keep them aside
In a heavy-bottomed pan heat oil and add cumin seeds; once the seeds start to splutter, reduce the flame to medium and add hing(asafoetida) and curry leaves and sauté for a minute, then add green chilies
Add carrots and sauté for another minute then add the turmeric powder, red chilli, and coriander powders mix well
Cover and cook until carrots are half done. Carrots will cook with the greens too so stop here and add carrot greens and green peas and mix well; cover and simmer for 5 minutes
Finally, add salt and Garam Masala, mix well serve hot with hot rotis or parathas
