WHAT DO I USE TO MAKE IT?
- 1 large onion, diced
- 4 cups water
- I cup black-eyed peas soaked, boiled (Reserve the water from the Black eyed beans
- 2 diced tomatoes-big
- 2 celery stalks cut diagonally into ½ inch piece
- 1 carrot cut thin
- 1 bunch green onion finely chopped
- a fistful of Power Green Mix from Costco
- 1 cup mushroom (any kind, I use portabella) cut into thin slices
- ¾ tsp garlic minced
- ½ tsp ginger
- ½ tsp salt
- 1-2 jalapeno (for kick)
- ¼ tsp ground black pepper
- ¼ tsp ground cumin
HOW DO I MAKE IT?
In a large Dutch oven, cook garlic and ginger with the onion over medium heat until onion is pink. Pour in the water, and stir in boiled black-eyed peas, diced tomatoes, celery, salt, celery, carrot, mushroom, and cumin until thoroughly mixed.
Add the reserved water from the boiled Black-eyed beans.
Bring the soup to a boil, reduce heat to a simmer, cover, and simmer for 45 minutes.
Add the green onion once the soup is done.
When serving put cheese according to your taste. You can also top it with corn chips.
If you don’t worry about fat, butter is always a good addition 😊
