Ingredients (for 12 muffins):
- 2 cups flour (all purpose or multi grain)
- 1/2 teaspoon salt
- 1 1/2 teaspoon baking soda
- 4 bananas
- 1 cup brown sugar
- 3/4 cup unsalted butter, melted
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cups chopped pecans
Directions:
Preheat oven to 370 degrees F and butter 2 muffin tins.
Mix the flour, salt and baking soda in a large bowl; set it aside. In a small bowl, mash 2 of the bananas with a fork, leaving a bit of texture. In a different bowl, with an electric mixer with a wire whisk, blend the remaining bananas and sugar together for around 3 minutes. Add the eggs, butter and vanilla and beat well. Mix in the dry ingredients (that were mixed in the large bowl). Add the nuts and mashed bananas. Spoon the batter in to muffin tins to fill them about halfway.
Bake for about 15-16 minutes, until a toothpick stuck in the muffins comes out clean.
Let the muffins cool before turning them out. Serve hot or at room temperature.
